Spina Sapori di Puglia is one of the five Producers of the Manduria Tomato Slow Food Presidium. Starting from 2018, Slow Food's objective has been to save this ancient seed from extinction by entrusting small local producers with the task of transforming it first into fresh fruit and then in raw materials for the production of preserves, under the guidance of a strict specification that has oriented all the work of the producers towards the ethics of good, clean and fair food, from sowing to harvesting, up to the conservation of the product.
