They grow organic two-row barley (Concerto variety) in their own fields, which is subsequently malted in Italy by the cooperative of brewing barley producers of which we are part. A small percentage of organic wheat and fresh organic bergamot peels are added to the barley malt which give this beer great freshness and drinkability.
